  • ⅓ cup confectioners' sugar
  • 8 tablespoons unsalted butter (chilled)
  • 1 large egg yolk
  • ¼ cup lemon zest + ½ cup lemon juice
  • 1 large egg + 5 large yolks
  • ⅓ cup honey
  • 10 ounces blueberries
  • 2 tablespoons cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix flour, confectioners' sugar, and salt. Cut in the chilled butter until crumbly, then add the egg yolk and cream. Press into a tart pan and bake for 20 minutes until golden.
  2. For the lemon curd, combine lemon juice, zest, honey, egg yolks, and salt in a saucepan over low heat. Stir continuously until thickened (about 10 minutes). Remove from heat and stir in butter until melted. Let cool slightly before pouring over the cooled crust.
  3. For the blueberry filling, cook blueberries with honey over medium heat until they release juices. Mix cornstarch with water and add to thicken. Pour over the lemon curd layer.
  4. Chill in the refrigerator for at least four hours or overnight before serving.
