  • 6 oz. cream cheese (room temperature)
  • 3 Tablespoons granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon corn starch
  • ¾ cup powdered sugar
  • 1 ½2 ½ teaspoons milk or cream

Instructions

  1. Preheat the oven to 425°F (220°C) and line a cupcake pan with paper liners.
  2. In a bowl, mix together flour, light brown sugar, and salt to prepare the streusel topping; add melted butter until coarse crumbs form.
  3. For the cream cheese filling, blend softened cream cheese, granulated sugar, cornstarch, and vanilla until smooth.
  4. In a large bowl, combine dry ingredients: all-purpose flour, baking powder, and salt.
  5. In another bowl, whisk together egg and granulated sugar; then add yogurt, oil, and vanilla.
  6. Gently fold wet ingredients into dry ingredients; then add fresh berries carefully.
  7. Fill each muffin liner with batter, add cream cheese filling in the center, top with more berries and streusel.
