  • ½ yellow bell pepper, diced
  • 1 red onion, cubed
  • 3 tablespoons olive oil
  • 1 teaspoon lemon zest
  • 3 tablespoons lemon juice
  • 1.5 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon Dijon mustard
  • 2 tablespoons parsley, chopped finely
  • 1 tablespoon oregano, chopped finely

Instructions

  1. Preheat grill to medium-high heat.
  2. If using wooden skewers, soak them in water for 10 minutes.
  3. Cut beef and vegetables into uniform pieces.
  4. In a mixing bowl, whisk together olive oil, lemon zest, lemon juice, honey, garlic, salt, pepper, Dijon mustard, parsley, and oregano to create the marinade.
  5. Combine cubed beef and veggies in a large bowl with two-thirds of the marinade; toss to coat thoroughly.
  6. Thread marinated ingredients onto skewers alternately.
  7. Grill skewers for about 10 minutes per side or until desired doneness is achieved. Brush with remaining marinade halfway through cooking.
