  • ¼ cup finely chopped fresh basil
  • 4 garlic cloves, minced
  • 3 green onions, finely chopped (white and green parts)
  • 1 tablespoon fish sauce
  • 12 teaspoons sriracha (depending on desired spice level)
  • 1 tablespoon sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon kosher salt
  • ½ cup mayonnaise
  • 2 green onions, finely chopped (white and green parts)
  • 2 teaspoons sriracha (plus more to taste)
  • 4 brioche buns, toasted
  • ½ cup quick pickled vegetables, drained
  • ¼ cup roughly chopped cilantro
  • 1 jalapeño, thinly sliced (optional)
  • 2 Persian cucumbers, sliced

Instructions

  1. In a large mixing bowl, combine ground beef, chopped basil, minced garlic, chopped green onions, fish sauce, sriracha, sugar, cornstarch, black pepper, and salt. Mix gently and form into 4 patties.
  2. For the sriracha mayo, whisk together mayonnaise and additional chopped green onions and sriracha in a small bowl until smooth.
  3. Heat sesame oil in a cast iron skillet over medium heat. Cook patties for about 5 minutes on each side until browned and cooked through (internal temperature should reach 160°F).
  4. Toast brioche buns. Spread sriracha mayo on both sides of each bun. Assemble burgers by layering quick pickled vegetables, cilantro, sliced jalapeño (if using), cooked patties, and cucumber slices before placing the top bun.
