Ingredients

Scale
  • 4 medium zucchinis (sliced diagonally into 1/2-inch thick pieces)
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • Salt & pepper to taste
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. Combine olive oil and balsamic vinegar in a shallow baking dish. Add the sliced zucchinis and toss until well coated. Season with salt and pepper.
  2. Allow the zucchini to marinate while preheating your grill to medium-high heat (around 500-600°F).
  3. Lightly oil the grill grates to prevent sticking. Place marinated zucchini slices on the grill and cook for about 2 minutes per side until tender but not mushy.
  4. Once grilled, sprinkle freshly grated parmesan over each slice and close the grill lid for an additional minute to melt the cheese.
  5. Remove from grill and serve hot, optionally drizzled with extra balsamic vinegar or reduction.
