  • 1 cup pearl couscous
  • 1/2 cup cherry tomatoes, halved
  • 15 oz can corn, drained and rinsed
  • 1 avocado, diced
  • 1/4 cup white balsamic vinaigrette
  • 1 tbsp olive oil
  • Fresh basil for garnish
  • Salt & pepper to taste

Instructions

  1. Cook the pearl couscous according to package instructions until tender. Drain excess water.
  2. In a pan over medium-high heat, sauté the drained corn with olive oil, salt, and pepper until slightly browned.
  3. Allow both the cooked couscous and roasted corn to cool completely.
  4. Halve the cherry tomatoes and cube the avocado while waiting for cooling.
  5. In a large bowl, combine cooled couscous, roasted corn, halved tomatoes, diced avocado, and white balsamic vinaigrette. Mix gently and season with salt and pepper.
  6. Chill in the refrigerator for about 15 minutes before serving.
