  • 1 lb. fettuccine
  • ¼ cup extra virgin olive oil
  • 1 small onion (quartered and sliced)
  • 1 lb. fresh asparagus (cut into inch pieces)
  • 3 cloves garlic (minced)
  • ¼½ teaspoon red pepper flakes
  • ⅓ cup grated Parmesan cheese
  • 810 fresh basil leaves
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoons lemon zest
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in a large pot of salted boiling water according to package directions until al dente.
  2. Reserve ½ cup of pasta water before draining the fettuccine.
  3. In a skillet, heat olive oil over medium heat and sauté the onion for about 5 minutes until lightly browned.
  4. Add asparagus and cook for another 2-3 minutes until just tender; then add minced garlic and sauté for an additional minute.
  5. In a large bowl, combine the cooked fettuccine with sautéed vegetables, remaining olive oil, red pepper flakes, Parmesan cheese, basil, thyme, lemon zest, salt, and pepper.
  6. Toss well to combine ingredients thoroughly.
