  • 1/2 cup almond flour

  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grate the zucchinis and squeeze out excess moisture using a kitchen towel.
  3. In a mixing bowl, combine grated zucchini, mozzarella cheese, egg, almond flour, garlic powder, onion powder, and salt until well mixed.
  4. Line a baking sheet with parchment paper and spread the zucchini mixture evenly into a square shape about half an inch thick.
  5. Bake for 20-25 minutes until golden brown.
  6. Sprinkle cheddar cheese over half of the baked crust, fold it over to create squares or triangles, and return to the oven for another 10 minutes until the cheese is melted and bubbly.
  7. Allow cooling slightly before cutting into squares and serve warm.
