  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced pineapple
  • 1 cup diced tomato
  • 2 tbsp diced red onion (optional)
  • 1 tbsp chopped cilantro
  • Juice of lime
  • 1 cup cooked brown rice
  • Extra cilantro for garnish

Instructions

  1. In a skillet, toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Sear over medium heat for 2-3 minutes per side until pink and slightly charred.
  2. In a mixing bowl, combine corn, pineapple, tomato, red onion (if using), cilantro, lime juice, and salt. Mix well.
  3. On a plate or bowl, add cooked brown rice. Arrange seared shrimp on one side and pineapple corn salsa on the other. Garnish with additional cilantro and lime juice before serving.
