  • 100g shrimp

  • 1 yellow onion (sliced)
  • 120g white mushrooms (sliced)
  • 1 carrot (cut matchstick-style)
  • Spring onions (green & white parts chopped separately)
  • Soy sauce
  • Oyster sauce
  • Rice vinegar
  • Brown sugar
  • Toasted sesame oil

Instructions

  1. Boil udon noodles according to package instructions. Drain and rinse with cold water; drizzle with oil to prevent sticking.
  2. In a large frying pan over medium-high heat, sauté minced garlic for 1 minute until fragrant, then add sliced mushrooms and cook until tender. Add onions and carrots; stir-fry for an additional 2-3 minutes before removing from the pan.
  3. In the same pan, heat oil and cook shrimp seasoned with soy sauce until pink throughout.
