  • 23 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn kernels, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend
  • 1 large bag (9.25 oz) Nacho Cheese Doritos, lightly crushed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef with the diced onion and minced garlic until the meat is no longer pink; drain excess fat.
  3. Add taco seasoning, black beans, corn kernels, and diced tomatoes to the skillet. Simmer for about 2-3 minutes until heated through.
  4. In a mixing bowl, combine the cream of mushroom soup and sour cream until well blended.
  5. In the prepared baking dish, layer half of the meat mixture followed by half of the cream mixture and one cup of shredded cheese. Sprinkle half of the crushed Doritos on top.
  6. Repeat layering with remaining meat mixture, cream mixture, and finish with leftover cheese.
  7. Cover with foil and bake for 15 minutes; uncover and bake for an additional 10 minutes until cheese is bubbly.
  8. Let rest for 5-10 minutes before serving. Top with garnishes as desired.
