  • 1 ripe watermelon
  • 230 g glutinous rice flour
  • 65 g cornstarch
  • 40 g sugar
  • 300 g watermelon juice (blended from watermelon)
  • 30 g butter
  • Cooked glutinous rice flour (for dusting)

Instructions

  1. Cut the watermelon into chunks and blend until smooth. Strain through a fine mesh sieve if desired.
  2. In a mixing bowl, whisk together glutinous rice flour, cornstarch, and sugar.
  3. Add fresh watermelon juice and melted butter to the dry ingredients, stirring until smooth.
  4. Pour the batter into a steamer basket lined with parchment paper. Steam over boiling water for about 20-25 minutes until firm and translucent.
  5. Allow the dough to cool slightly before dusting your work surface with cooked glutinous rice flour. Shape into balls or discs as preferred.
  6. Serve immediately or refrigerate for later enjoyment.
