1 ripe watermelon
230 g glutinous rice flour
65 g cornstarch
40 g sugar
300 g watermelon juice (blended from watermelon)
30 g butter
Cooked glutinous rice flour (for dusting)
Instructions
Cut the watermelon into chunks and blend until smooth. Strain through a fine mesh sieve if desired.
In a mixing bowl, whisk together glutinous rice flour, cornstarch, and sugar.
Add fresh watermelon juice and melted butter to the dry ingredients, stirring until smooth.
Pour the batter into a steamer basket lined with parchment paper. Steam over boiling water for about 20-25 minutes until firm and translucent.
Allow the dough to cool slightly before dusting your work surface with cooked glutinous rice flour. Shape into balls or discs as preferred.
