  • 12 ounces short pasta such as rigatoni, penne, or fusilli
  • 4.2 ounces goat cheese, crumbled
  • 1/4 cup heavy cream
  • 20 fresh sage leaves
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 tablespoon unsalted butter
  • Salt and freshly ground black pepper, to taste
  • 1 ounce grated parmesan cheese
  • Crushed red pepper flakes

Instructions

  1. Preheat your oven to 430°F. Toss diced sweet potatoes with minced garlic, olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until tender.
  2. In a large pot of salted boiling water, cook your choice of pasta according to package instructions until al dente. Reserve 2/3 cup of cooking water before draining.
  3. In a skillet, heat the remaining olive oil and butter over medium heat. Fry sage leaves for about 1-2 minutes until crispy; remove and drain on paper towels.
  4. Add roasted sweet potatoes to the skillet and mash half while keeping some chunks intact for texture.
  5. Stir in the drained pasta along with heavy cream, crumbled goat cheese, and reserved pasta water until well combined and creamy.
  6. Season to taste with salt and black pepper; serve topped with crispy sage leaves, grated Parmesan cheese, olive oil drizzle, and crushed red pepper flakes if desired.
