Ingredients

  • Lasagna noodles
  • Pumpkin puree
  • Fresh spinach
  • Ricotta cheese
  • Grated mozzarella cheese
  • Olive oil
  • Garlic cloves
  • Onion
  • Vegetable broth
  • Dried oregano
  • Salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Stir in minced garlic, vegetable broth, oregano, salt, and pepper; simmer for 5 minutes.
  3. In a mixing bowl, combine ricotta cheese with half of the mozzarella and some salt. Fold in the fresh spinach.
  4. In a baking dish, layer sauce at the bottom, followed by lasagna noodles, half of pumpkin puree, half of cheese mixture; repeat layers ending with sauce.
  5. Sprinkle remaining mozzarella on top and cover with foil. Bake for 30 minutes; remove foil and bake for an additional 15-20 minutes until bubbly and golden.
  6. Let cool slightly before slicing and serve warm.
