  • 1/3 cup (65g) packed light brown sugar
  • 3 tablespoons (65g) maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup (105g) chopped pecans
  • 1 3/4 cups (220g) all-purpose plain flour
  • 1 cup (200g) granulated sugar
  • 2 1/4 teaspoons baking powder
  • 1/8 teaspoon salt (if using unsalted butter)
  • 3/4 cup (190g) dairy-free milk (room temperature)
  • 1/4 cup (55g) neutral flavored oil
  • 1/4 cup (55g) melted vegan butter (and cooled or extra oil)
  • 1 teaspoon apple cider vinegar (optional)
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a round cake pan by lining it with parchment paper and greasing it.
  2. In a mixing bowl, combine melted vegan butter, light brown sugar, maple syrup, ground cinnamon, and salt. Pour into the pan and sprinkle chopped pecans on top.
  3. In another bowl, whisk together flour, granulated sugar, baking powder, and salt. In a separate bowl, mix dairy-free milk, oil, melted vegan butter, vanilla extract, and ground cinnamon.
  4. Combine wet and dry ingredients until just mixed; pour batter over the pecans in the pan.
  5. Bake for about 50 minutes or until a toothpick inserted comes out clean. Let cool slightly before flipping onto a serving plate.
