  • 1 Tbsp olive oil
  • 3 large garlic cloves, minced or pressed
  • 2 cans (15 oz each) chickpeas
  • 1 large potato, diced
  • 2 cups low-sodium vegetable broth
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • ¼ tsp chili flakes
  • Salt & black pepper, to taste

Instructions

  1. Blend one can of chickpeas (with liquid) in a blender until smooth.
  2. In a pot over medium heat, sauté minced garlic in olive oil until fragrant (about 1 minute).
  3. Add blended chickpeas, drained chickpeas, diced potato, paprika, rosemary, thyme, chili flakes, and pepper; stir well.
  4. Pour in vegetable broth and mix again.
  5. Cover and bring to a boil; reduce heat to medium-low and simmer for 25 minutes, stirring occasionally.
  6. Taste and adjust seasoning before serving hot with optional olive oil drizzle.
