  • 4 ounces mushrooms
  • 15-ounce can cannellini beans
  • 2.5 cups vegetable broth

  2. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until golden brown. Add carrots and celery; cook for about 5 minutes.
  3. Stir in mushrooms, tomato paste, Worcestershire sauce, dried parsley, beans, broth, thyme, salt, and pepper. Bring to a gentle simmer.
