  • 3 cups cooked brown rice (seasoned)
  • 1 can sweet corn
  • 2 green onions
  • ½ cup cilantro
  • 3 cups shredded lettuce
  • 1 cup guacamole
  • ¾ cup vegan sour cream
  • ½ cup vegan shredded cheese
  • 6 large flour tortillas

Instructions

  1. Prepare the bean-corn mixture by draining and rinsing the black beans and corn. In a bowl, combine them with paprika, cumin, lime juice, salt, and pepper. Stir in green onions and cilantro.
  2. Assemble the burrito by laying a tortilla flat. Add seasoned brown rice in the center followed by the bean-corn mixture. Top with salsa, lettuce, vegan cheese, sour cream, and guacamole.
  3. Roll up the tortilla tightly after folding in the sides. Wrap in aluminum foil for easy handling and cut in half before serving.
