  • 3 tablespoons (35g) granulated sugar (brown sugar or coconut sugar)
  • 23 tablespoons cold water (as needed)
  • 3 tablespoons (40g) granulated sugar (brown sugar or coconut sugar)
  • 2 teaspoons ground cinnamon
  • 1 tablespoon (8g) all-purpose plain flour (or gluten-free flour)
  • 45 apples (of choice, cored)
  • Dash of lemon juice (optional)
  • 2 tablespoons (30g) vegan butter or coconut oil (melted)
  • 3 tablespoons (60g) apricot jam (any light-colored jam)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Add chilled vegan butter and mix until crumbly. Gradually add cold water until the dough holds together.
  3. Roll out the dough on a floured surface to fit your tart pan. Press it into a greased 9-inch loose-bottom tart pan.
  4. In another bowl, mix sliced apples with sugar, cinnamon, and optional lemon juice. Arrange over the pastry base and drizzle melted vegan butter on top.
  5. Bake for about 70 minutes until the apples are tender.
  6. Brush warm apricot jam over the tart for shine and allow cooling slightly before serving.
