  • 1 cup powdered sugar
  • 23 tablespoons lemon juice or milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, mix sugar, oil or melted butter, eggs, vanilla extract, lemon juice, and lemon zest until well combined.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in the grated zucchini.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean from the center.
  6. Let cool in the pan for about 10 minutes before transferring to a wire rack.
