  • 3 ribs celery (diced)
  • 2 large carrots (sliced)

  • 1 tablespoon tomato paste
  • 4 cups chicken broth
  • 2 cans Great Northern beans (drained and rinsed)
  • 2 cups fresh baby spinach
  • ½ cup heavy whipping cream
  • Italian seasoning
  • crushed red pepper
  • ground black pepper

Instructions

  1. In a Dutch oven over medium-high heat, brown the sausage until fully cooked, about 10–15 minutes.
  2. Reduce heat to medium; add onions, celery, and carrots. Sauté until softened, about 3–5 minutes. Stir in garlic for another minute.
  3. Add tomato paste, Italian seasoning, crushed red pepper, and black pepper; mix well.
  4. Pour in chicken broth and add beans; bring to simmer and cook for 6–7 minutes until vegetables are tender.
  5. Stir in heavy cream and spinach; cook until spinach wilts, about 5 minutes.
  6. Serve warm garnished with chopped parsley.
