  • ½ pound penne pasta

  • 2 ½ cups chicken stock
  • 5 tbsp sun-dried tomato pesto
  • 3 cups baby spinach
  • 2 tbsp olive oil
  • 1 large onion (diced)
  • 2 cloves garlic (minced)
  • 2 tsp Italian herbs
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 tbsp Parmesan (freshly grated)
  • ½ cup tomatoes (such as cherry tomatoes)
  • Salt and pepper to taste

Instructions

  1. Cut the chicken into bite-sized pieces and season with Italian herbs, garlic powder, salt, and black pepper.
  2. Heat olive oil in a non-stick lidded pan over medium heat; sauté minced garlic and diced onion for about 2 minutes.
  3. Add the seasoned chicken and sun-dried tomato pesto; cook until chicken is lightly colored but not fully cooked.
  4. Pour in chicken stock and bring to a simmer; add the penne pasta and partially cover the pan.
  5. Cook until pasta is al dente while stirring occasionally.
  6. Remove from heat; stir in pouring cream and baby spinach until wilted.
  7. Mix in freshly grated parmesan cheese and halved cherry tomatoes; serve warm.
