  • 1 1/2 cups fresh breadcrumbs (or panko)
  • 3 tablespoons milk
  • 1/2 cup finely minced onion
  • 4 garlic cloves, pressed

  • 1 tablespoon chopped parsley
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 cup grated parmesan
  • 1 large whole egg plus 1 yolk
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons ghee or unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup finely minced onion
  • 2 teaspoons Italian seasoning
  • 1 (15 ounce) can organic pumpkin puree
  • 1 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage

Instructions

  1. Preheat your skillet over medium-high heat.
  2. In a large bowl, mix breadcrumbs with milk and let sit for 3 minutes. Add onion, garlic, sage, parsley, Italian seasoning, parmesan cheese, egg, and turkey; mix until just combined.
  3. Form the mixture into meatballs and freeze on parchment-lined trays for about 20 minutes.
  4. Sear meatballs in heated skillet until browned on all sides (about 10 minutes).
  5. In the same skillet, melt ghee and sauté onion and garlic until fragrant. Whisk in pumpkin puree, seasonings, and chicken stock; simmer for a few minutes.
  6. Stir in cooked meatballs and warm through before serving.
