  • 1 lb large shrimp, peeled and deveined
  • 2 cups cooked jasmine or basmati rice
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, diced
  • 1/2 cup shredded carrots
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce or coconut aminos
  • Juice of 1 lime
  • Garlic powder, smoked paprika, salt, and black pepper to taste

Instructions

  1. Prepare all ingredients by washing and chopping the vegetables and fruit.
  2. Heat olive oil in a skillet over medium heat. Add shrimp and cook until pink and opaque (about 2–3 minutes per side).
  3. Season with garlic powder, smoked paprika, salt, and black pepper. Stir in soy sauce or coconut aminos along with lime juice.
  4. In serving bowls, layer cooked rice at the bottom. Top with seasoned shrimp, pineapple chunks, diced bell pepper, shredded carrots, sliced avocado, and red onion.
  5. Garnish with fresh cilantro and add optional toppings like jalapeños or sesame seeds.
