  • 2 garlic cloves (finely chopped)
  • 3 teaspoons tomato paste
  • 2 medium tomatoes (diced)
  • Fresh dill (to taste)
  • Sea salt (to taste)

Instructions

  1. Heat 5 tablespoons of olive oil in a medium-sized pot over moderate heat.
  2. Sauté minced onion and garlic until soft.
  3. Add potatoes, zucchinis, green peas, and carrots; cook for about 5 minutes.
  4. Stir in tomato paste; cook for an additional minute.
  5. Mix in diced tomatoes, sea salt, and ground pepper; cook for another 2 minutes.
  6. Pour in hot water or vegetable stock to cover the vegetables; bring to a gentle simmer.
  7. Cover and simmer on low heat for about 40 to 50 minutes until vegetables are tender.
  8. Stir in remaining olive oil and fresh dill; adjust seasoning if needed.
  9. Cook partially covered for another 10 minutes until most liquid evaporates.
  10. Let it rest covered for about 15 minutes before serving.
