  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • Chili powder, cumin, paprika, cayenne pepper, salt, and black pepper to taste

Instructions

  1. In a large pot over medium heat, sauté the diced onion and green bell pepper for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
  2. Add ground beef or turkey to the pot; break apart and cook until browned (about 7-10 minutes). Drain excess fat if needed.
  3. Stir in diced tomatoes and tomato sauce. Pour in beef broth and mix well.
  4. Add kidney beans and pinto beans gently without mashing them. Season with chili powder, cumin, paprika, cayenne pepper (if using), salt, and black pepper.
  5. Bring to a gentle boil; then reduce heat to low and simmer uncovered for about 45 minutes, stirring occasionally.
