  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 stick unsalted butter (cold)
  • 1 tablespoon cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional but recommended)
  • 1/2 teaspoon nutmeg
  • 2 teaspoons corn starch
  • 1 teaspoon cream of tartar
  • 1/2 stick unsalted butter (room temperature)
  • 2 tablespoons water
  • 1 teaspoon fresh lemon juice
  • 1/4 cup boiling hot water
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar (to dust top of cobbler)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray a 9×13 baking dish with non-stick spray and combine frozen peaches, sugars, extracts, spices, cornstarch, butter, water, and lemon juice in the dish. Mix well and cover with foil, baking for 20 minutes.
  3. In a separate bowl, mix flour, sugars, baking powder, salt, and cinnamon. Cut in cold butter until crumbly.
  4. Add boiling water to the mixture until just combined.
  5. Remove the peaches from the oven and drop spoonfuls of dough over them. Sprinkle with cinnamon-sugar mix and bake uncovered for an additional 30–45 minutes until golden brown.
