  • 2 1/2 cups chocolate bear-shaped graham crackers
  • 13 tbsp unsalted butter
  • 5 oz chopped kataifi dough
  • 24 oz cream cheese
  • 1 cup white sugar
  • 1/3 cup sour cream
  • 4 tbsp tahini
  • 3 large eggs
  • 1/4 tsp almond extract
  • 2 tsp vanilla extract
  • 1 1/4 cups semi-sweet chocolate chips
  • 3/4 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers with melted butter. Press into the bottom of a springform pan.
  2. Bake crust for about 10 minutes until golden. Let cool.
  3. In a large bowl, beat softened cream cheese until smooth. Mix in sugar, sour cream, tahini, almond extract, vanilla, salt, and eggs until just combined. Fold in chocolate chips.
  4. Pour filling over cooled crust and smooth it out. Bake for approximately 70 minutes until set but slightly jiggly in the center.
  5. Turn off the oven and crack the door open; let cool inside for an hour before refrigerating for at least four hours or overnight.
