  • 1 medium sweet potato
  • 1 tsp olive oil
  • Salt & pepper
  • 150g lean ground beef
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Sliced avocado
  • 1 cup cottage cheese
  • 1/2 tsp honey

Instructions

  1. Preheat oven to 200C (400F). Toss cubed sweet potatoes in olive oil and season with salt and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden.
  2. In a skillet over medium heat, cook ground beef until browned. Season with smoked paprika, garlic powder, salt, and pepper.
  3. In a mixing bowl, layer roasted sweet potatoes at the bottom, followed by cooked beef, avocado slices, and dollops of cottage cheese.
  4. Drizzle honey over the top and add a sprinkle of black pepper before serving.
