  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 432 g canned pineapple pieces, drained (juice reserved)
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • Fresh ginger and garlic, grated

Instructions

  1. Season diced chicken with salt and pepper; coat thoroughly in cornstarch.
  2. In a frying pan over medium-high heat, fry the chicken in vegetable oil until golden brown (5-7 minutes). Set aside.
  3. Sauté onion and bell peppers in the same pan for about 3-4 minutes until softened.
  4. Combine ketchup, cider vinegar, brown sugar, soy sauce, ginger, garlic, and reserved pineapple juice in a bowl; mix well.
  5. Return chicken to the pan with sautéed vegetables; pour in the sauce mixture and cook for an additional 3-5 minutes until heated through.
  6. Gently fold in drained pineapple pieces before serving.
