  • 1 8-9 oz pkg tortellini, fresh or frozen
  • 1 medium zucchini, thinly sliced
  • 1 large carrot, peeled and diced
  • 1 pint grape tomatoes, halved
  • 5 green/spring onions, thinly sliced
  • 1/4 cup fresh parsley leaves, diced
  • 3/4 cup creamy ranch dressing
  • 23 tbsp shredded Parmesan cheese

Instructions

  1. Cook the tortellini in boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooled tortellini with zucchini, carrot, grape tomatoes, green onions, and parsley.
  3. Add the creamy ranch dressing and sprinkle with Parmesan cheese. Gently toss to combine.
  4. Cover and chill in the refrigerator for at least 2 hours before serving to allow flavors to meld.
