  • 4 large Portobello mushrooms
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • ½ cup cherry tomatoes, diced
  • ¼ cup breadcrumbs
  • ¼ cup Parmesan cheese, grated
  • ½ cup mozzarella cheese, shredded
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet.
  2. Brush both sides of the mushrooms with olive oil and place them gill-side up on the sheet. Season with salt and pepper.
  3. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add chopped spinach and cook until wilted. Remove from heat and mix in diced tomatoes, breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Spoon the filling into each mushroom cap and top with shredded mozzarella.
  5. Bake for 15–18 minutes until the mushrooms are tender and the cheese is melted.
