  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion
  • 2 garlic cloves
  • 6 tbsp olive oil
  • Salt and black pepper to taste
  • Pumpkin pie spice
  • Fresh thyme
  • Fresh oregano
  • Fresh sage

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse mini pumpkins, cut off the tops, and scoop out seeds.
  3. In a frying pan over medium heat, sauté diced onion and minced garlic in olive oil until fragrant.
  4. In a mixing bowl, combine ground beef, pumpkin puree, sautéed onion and garlic, spices, salt, and pepper. Mix well.
  5. Place pumpkins in a greased casserole dish; fill each with the beef mixture and replace tops.
  6. Roast for 30-35 minutes until pumpkins are tender.
