  • 4 medium bell peppers (any color)
  • 2 tablespoons extra virgin olive oil
  • 1 large onion (chopped)
  • 3 cloves garlic (grated)
  • 1½ teaspoons ground coriander (or ground cumin)
  • 1 teaspoon turmeric
  • ¼ teaspoon red pepper flakes (or more to taste)
  • 1 cup rice
  • 1 can (15 ounces) lentils
  • 1 can (15 ounces) diced tomatoes
  • 2 cups vegetable broth
  • Fresh herbs for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the onion until translucent.
  2. Stir in rice, garlic, spices, and sauté until fragrant. Add broth, lentils, diced tomatoes, salt, and pepper; simmer for about 10 minutes.
  3. Preheat oven to 350°F. Cut bell peppers in half lengthwise and remove seeds. Fill each half with the rice-lentil mixture.
  4. Place stuffed peppers in a baking dish and bake for about 40 minutes or air fry for approximately 30 minutes until tender.
