  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • ¾ cup strawberry jam or preserves
  • Sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large mixing bowl, cream together the softened butter with granulated sugar and powdered sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition; stir in vanilla (and almond extract if using).
  5. Gradually combine wet and dry ingredients until just mixed.
  6. Scoop tablespoon-sized portions of dough; flatten into discs creating a small well in the center.
  7. Fill half of the discs with approximately 1 teaspoon of strawberry jam; top with another disc and seal edges with a fork.
  8. Bake for 10-12 minutes until edges are lightly golden; cool before decorating.
