  • 4 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • ¾ cup milk (room temperature)
  • 1½ cups strawberry purée (from above)
  • 1 cup unsalted butter (room temperature) for buttercream
  • 45 cups powdered sugar (sifted) for buttercream
  • 1 teaspoon vanilla extract for buttercream
  • 1 pinch salt for buttercream
  • 1 cup strawberry purée (from above) for buttercream

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. 2. Puree the strawberries until smooth; reserve for both the cake and frosting.
  3. 3. In one bowl, whisk together flour, baking powder, baking soda, and salt.
  4. 4. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in sour cream and vanilla.
  5. 5. Gradually mix in dry ingredients alternating with milk until just combined. Fold in strawberry purée.
  6. 6. Pour batter into prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Cool cakes completely on a wire rack.
  7. 7. For the buttercream, beat butter until smooth; add powdered sugar gradually along with some strawberry purée until desired consistency is reached.
  8. 8. Assemble layers with buttercream between them and cover the entire cake.
  9. 9. Garnish with fresh strawberries if desired before serving.
