  • 4 oz cream cheese
  • 1 cup plus 2 Tbsp heavy cream
  • 1 Tbsp cornstarch
  • 2 Tbsp brown sugar
  • 2 Tbsp granulated sugar
  • 1 Tbsp lemon juice
  • Icing sugar for dusting
  • Croissants

Instructions

  1. Prepare the Strawberry Mixture: In a small bowl, mix cornstarch with cold water until smooth. In a saucepan over medium heat, combine frozen strawberries, brown sugar, granulated sugar, and lemon juice. Cook until bubbling, then stir in the cornstarch mixture to thicken. Remove from heat and cool.
  2. Make the Cream Filling: Beat softened cream cheese with icing sugar until smooth. In another bowl, whip chilled heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture.
  3. Assemble Croissants: Cut croissants in half lengthwise. Spread cream filling on the bottom half and top with strawberry mixture before closing.
  4. Serve: Dust with icing sugar and garnish with fresh strawberries before serving.
