  • 1 lb flank steak
  • 2 ears sweet corn
  • 1 large red bell pepper
  • 1 cup halved grape tomatoes
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 8 oz fusilli pasta
  • 1/2 cup crumbled cotija cheese
  • Cilantro lime vinaigrette

Instructions

  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. Season the flank steak with salt and pepper. Grill for about 6 minutes on one side, then flip and cook until your desired doneness (130°F for medium-rare). Let rest before cutting into cubes.
  3. Grill the corn and red pepper for 2 to 3 minutes on each side until charred. Allow to cool before chopping.
  4. Cook fusilli pasta according to package directions until al dente, then drain and rinse with cold water.
  5. In a large mixing bowl, combine the pasta, cubed steak, corn, bell pepper, tomatoes, cucumber, red onion, and cotija cheese. Season with salt and pepper.
  6. Drizzle with cilantro lime vinaigrette and toss until well combined.
