  • 4 medium tortillas (flour, whole wheat, or gluten-free)
  • 2 cups fresh spinach (chopped)
  • 1 cup feta cheese (crumbled)
  • 2 tablespoons olive oil or butter
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1/4 cup black olives (sliced)
  • 1/2 cup cooked grilled chicken (diced)

Instructions

  1. In a bowl, mix chopped spinach, crumbled feta, sun-dried tomatoes, sliced black olives, and diced grilled chicken until well combined.
  2. Heat a non-stick skillet over medium heat and add olive oil or butter.
  3. Place one tortilla on a flat surface and spoon filling onto half of the tortilla. Fold it over.
  4. Cook the folded quesadilla in the skillet for about 3-4 minutes on each side until golden brown.
