  • 1 bunch parsley (chopped)
  • 1 onion (diced)
  • 4 tablespoons psyllium husks
  • 4 tablespoons nutritional yeast flakes
  • 2 bell peppers (chopped)
  • 1/2 cup chickpea flour
  • 2 teaspoons smoked paprika
  • 1 teaspoon spicy paprika
  • Sea salt and ground pepper (to taste)
  • Oil (for frying)

Instructions

  1. Cook the lentils in a large pot covered with water for about 15 minutes until tender, then strain well.
  2. In a mixing bowl, mash the strained lentils until smooth.
  3. Add chopped parsley, diced onion, psyllium husks, nutritional yeast, chopped bell peppers, chickpea flour, smoked paprika, spicy paprika, salt, and pepper. Mix until you have a sticky dough; add more flour if necessary.
  4. Shape the mixture into patties and fry in a lightly oiled non-stick pan over medium heat for about 2 minutes on each side until golden brown.
