  • 1 chicken breast, cut into cubes
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt & pepper to taste
  • 1 cucumber, sliced
  • 6 cherry tomatoes, halved
  • 2 tbsp red onion, chopped
  • 1 tbsp chopped mint or parsley
  • Squeeze of lemon juice
  • 1 cup cooked white rice
  • 1 avocado, sliced
  • 1 tbsp spicy mayo (mayo + sriracha mix)
  • Optional: baby spinach or mixed greens

Instructions

  1. Heat olive oil in a skillet over medium heat. Season cubed chicken with paprika, garlic powder, chili powder, salt, and pepper. Cook for 5-6 minutes until browned and cooked through.
  2. In a mixing bowl, combine sliced cucumber, halved cherry tomatoes, chopped red onion, herbs, lemon juice, salt, and pepper. Toss well and chill while chicken cooks.
  3. To assemble, layer cooked white rice at the bottom of a bowl. Add baby spinach or mixed greens if desired. Top with grilled chicken cubes, avocado slices, cucumber salad, and a drizzle of spicy mayo.
