  • 150g boneless, skinless chicken breast, cut into cubes
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper (adjust to spice preference)
  • Salt & black pepper, to taste
  • 1 cup uncooked white rice
  • 1 cup water
  • Pinch of salt
  • 1 cup sliced cucumber
  • 1 cup cherry tomatoes, halved
  • 2 tbsp diced red onion
  • 1 tsp chopped fresh parsley or dill
  • Avocado, sliced
  • 1 tbsp spicy mayo (mayonnaise mixed with sriracha)

Instructions

  1. Rinse rice under cold water until it runs clear. Combine rinsed rice with water and a pinch of salt in a pot. Bring to a boil over high heat. Once boiling, reduce heat to low, cover with a lid, and let simmer for 12-15 minutes until fluffy.
  2. In a mixing bowl, toss chicken cubes with olive oil, paprika, garlic powder, cayenne pepper, salt, and black pepper until evenly coated. Heat a skillet over medium-high heat. Add seasoned chicken cubes and cook for 6-8 minutes or until golden brown and fully cooked through.
  3. In another small bowl, combine sliced cucumber, halved cherry tomatoes, diced red onion, parsley or dill, salt, and pepper. Toss gently until all ingredients are mixed well.
  4. In a serving bowl, add a generous portion of fluffy rice as your base. Arrange sliced avocado on top along with cooked chicken cubes and cucumber salad. Finish off by drizzling spicy mayo over everything for that extra kick!
