Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, combine diced pears with 2 tablespoons of flour. In another bowl, whisk together remaining flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix vegetable oil, applesauce, and eggs until well combined. Gradually add dry ingredients to wet ingredients until just mixed; gently fold in the prepared pears.
  4. Pour the batter into the prepared pan and top with chopped nuts if desired. Bake for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack.
