  • 2 tablespoons olive oil
  • 3 green onions
  • 1 leek
  • ½ cup fresh parsley
  • ¼ cup fresh dill
  • ¼ cup fresh mint
  • 1 pound feta cheese
  • 2 large eggs
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 340°F (170°C).
  2. In a large skillet, sauté the chopped leek and green onions in olive oil until soft. Add the spinach, salt, and pepper; cook until wilted.
  3. Transfer the greens to a bowl to cool slightly, then mix in crumbled feta cheese, beaten eggs, parsley, dill, and mint.
  4. Grease a baking pan and layer it with phyllo dough sheets, drizzling olive oil between layers. Spread the filling evenly over the base.
  5. Cover with more phyllo sheets using the same oil-draping technique; tuck in edges to form a rim. Brush the top layer with oil and score into squares.
