  • 2 cans (15 oz each) great northern beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups low-sodium chicken broth
  • 2 cups cooked shredded chicken
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon oregano
  • Salt and black pepper, to taste
  • ½ cup sour cream (or Greek yogurt)
  • ½ cup heavy cream (or half-and-half)
  • 1 cup shredded Monterey Jack cheese
  • Fresh cilantro, chopped
  • Sliced jalapeños
  • Lime wedges
  • Tortilla chips or strips

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion, minced garlic, and jalapeño until softened (about 4 minutes).
  2. Stir in drained beans, green chilies, chicken broth, shredded chicken, cumin, chili powder, smoked paprika, oregano, salt, and pepper. Bring to a simmer.
  3. Reduce heat and let it cook for 20–25 minutes to meld flavors.
  4. For a creamier texture, blend 1 cup of the chili until smooth and return it to the pot.
  5. Stir in sour cream, heavy cream, and Monterey Jack cheese until melted and creamy.
  6. Serve hot topped with fresh cilantro, lime wedges, sliced jalapeños, and tortilla chips.
