  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)
  • 1 medium onion (sliced)
  • 1 clove garlic (minced)
  • 1/2 cup chicken broth
  • 1 cup sour cream (full-fat)
  • Fresh chopped parsley (optional, to taste)

Instructions

  1. Slice the chicken breasts in half lengthwise; season with garlic powder, salt, and pepper.
  2. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Cook the chicken for 5-6 minutes on each side until golden brown and cooked through (165°F). Set aside.
  3. In the same skillet, lower the heat to medium, add remaining butter, and sauté sliced onions until softened (10-15 minutes). Stir in minced garlic for an additional 30 seconds.
  4. Add chicken broth, scraping any browned bits from the pan; stir in sour cream until smooth and heated through.
  5. Return chicken to the skillet, spoon sauce over it, season as needed, and serve hot.
