  • 4 garlic cloves
  • 1 large head roasted garlic
  • 4 cups vegetable broth
  • 4 large potatoes
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp fresh chopped parsley

Instructions

  1. Prepare all ingredients: dice the onion, mince the garlic cloves, peel and cut the potatoes.
  2. In a large pot, heat olive oil over medium heat. Sauté onion until translucent (about 5 minutes), then add minced garlic for an additional minute.
  3. Add the cut potatoes and vegetable broth to the pot. Season with salt and bring to a boil. Reduce to simmer for about 20 minutes until potatoes are tender.
  4. Remove from heat and blend until smooth using an immersion blender or countertop blender. Stir in roasted garlic and adjust seasoning as needed.
  5. Serve warm in bowls topped with croutons, grated cheese, and chopped parsley.
