  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar
  • 3 1/4 cups powdered sugar

Instructions

  1. Cream together softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until light and fluffy.
  2. In a separate bowl, whisk together flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually combine dry ingredients with wet ingredients until just mixed; avoid over-mixing.
  4. Chill dough for at least 30 minutes.
  5. Preheat oven to 350°F (177°C).
  6. Scoop dough into 2-inch balls and flatten slightly on lined baking sheets.
