  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/3 cup sugar
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate chips (or chunks)
  • 1 1/2 cups mini vegan marshmallows
  • 45 whole graham crackers, broken into pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press this mixture into the bottom of the prepared pan for the crust.
  3. In another bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Beat in eggs one at a time followed by vanilla extract.
  4. Gradually mix in flour, baking soda, and salt until combined. Fold in chocolate chips gently.
  5. Spread half of the cookie dough over the crust, layer with marshmallows and broken graham cracker pieces, then dollop remaining dough on top.
  6. Bake for 25–28 minutes until golden brown and set in the center. Allow to cool slightly before cutting into bars.
