  • 2 ½3 lb. boneless beef shoulder
  • 1 small yellow onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 ½ cups BBQ sauce of choice
  • ¼ cup apple cider vinegar
  • 6 cups cooked rice
  • 1 (10-12-ounce) bag coleslaw mix
  • 3 green onions, thinly sliced
  • ½ cup chopped fresh cilantro leaves
  • 3 tablespoons fresh lime juice
  • 2 tablespoons avocado oil or olive oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons honey
  • ½ teaspoon ground cumin
  • ¼½ teaspoon fine salt, or to taste
  • Pinch of chipotle powder or cayenne pepper, optional
  • Pickles or jalapeño slices for garnish

Instructions

  1. Prepare the slow cooker by placing sliced onions at the bottom.
  2. Season and place the beef on top of the onions, add minced garlic, BBQ sauce, and apple cider vinegar.
  3. Cover and cook on LOW for 8-10 hours until tender.
  4. Shred the beef in the slow cooker using forks.
  5. Mix coleslaw ingredients in a bowl and refrigerate until serving.
  6. Assemble bowls with rice, shredded beef, slaw, pickles, and additional BBQ sauce.
